Caprese Chicken Skewers with Creamy Lemon Pasta Recipe


For the Chicken Skewers:

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 pint cherry tomatoes
  • 1 cup fresh mozzarella balls (pearls or cubed)
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1/4 cup fresh basil leaves, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste

For the Creamy Lemon Pasta:

  • 12 ounces dry pasta (your preference)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh lemon juice
  • Salt and freshly ground black pepper, to taste


  1. Marinate the chicken: In a large bowl, combine olive oil, balsamic vinegar, chopped basil, garlic, oregano, salt, and pepper. Add the chicken and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  2. Prepare the pasta: Cook pasta according to package directions. While the pasta cooks, whisk together heavy cream, Parmesan cheese, lemon juice, and a pinch of salt and pepper in a saucepan. Heat over low heat until simmering, then remove from heat.
  3. Assemble and cook the skewers: Preheat a grill pan or grill to medium-high heat. Thread chicken cubes and cherry tomatoes onto skewers. Brush the skewers with olive oil and grill for 5-7 minutes per side, or until chicken is cooked through and tomatoes are slightly softened.
  4. To serve: Toss the cooked pasta with the creamy lemon sauce. Top with grilled skewers, fresh basil leaves, and an extra drizzle of balsamic vinegar (optional).
