Irish Soda Bread
Yield: 1 Loaf - Prep Time: 10 minutes - Cook Time: 30 minutes - Total Time: 40 minutes
Ingredients
2¼ cups (270 g) white whole wheat flour (or all-purpose or whole wheat flour)
¾ teaspoon baking soda
½ teaspoon salt
½ cup + 3 tablespoons (165 mL) unsweetened vanilla almond milk (or other milk)
2 tablespoons distilled white vinegar
Optional: flaky sea salt for topping
Instructions
Preheat oven to 425°F (218°C). Line a baking sheet with parchment paper or a silicone baking mat.
In a medium bowl, whisk together the flour, baking soda, and salt.
Make a well in the center and add the milk and vinegar.
Stir until the flour is just incorporated and a dough forms.
Transfer the dough onto the prepared baking sheet.
Lightly moisten your hands with water and shape the dough into a 1½-inch thick circle.
Use a sharp knife to score a cross (+) on the top of the loaf.
Sprinkle with flaky sea salt if desired and gently press it into the dough.
Bake for 27–30 minutes, until the crust is golden and the center feels firm.
Cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
Storage
Best eaten the same day it’s baked.
Leftovers can be stored in an airtight container at room temperature for 1–2 days (the crust will soften)
